Out of Town Nachos

Date: Dec 30th, 2008

Inspiration: We wanted to capture the essence of the two lands from whence our visitors traveled - China (Karl) and Florida (Kevin)


Recipe:

China
- Steak marinated in my Grandma's rip marinade (2 c soy sauce, 1/3 c orange juice, 1/2 c bourbon, garlic) but used fresh ginger instead of garlic
- Shiitake mushrooms
- Green peppers
- Snow peas
- Jack cheese (okay, not real Chinese, but necessary for construction)
- Thai hot peppers
- Red onion
- Black beans
- Tomato

Florida (okay, more Caribbean, but same idea)
- Pork chops w/ Jamaican jerk spice rub
- Mango peach jerk marmalade (canned peaches with juice, fresh mango, red onion, jerk spice, tequila, pepper, sea salt)
- Red, yellow peppers
- Cheddar, jack cheese
- Red onion
- Black beans
- Tomato
- Mango

The Chinese steak was braised in a Crock Pot for 4 hours and the Caribbean pork chops were grilled (slowly) with some of the marmalade. After the steak was done, I reduced the braising liquid to make a sauce, serving the nachos with the steak sauce, the marmalade, and fresh guac (duh).

Didn't one of them have pinto beans instead of black? Of course I can't remember which one, because I used both in my veggie sidejob.

Which was a mishmash of the two by the way (sans the meatz)
